Ingredients:
Chicken breast: 12oz
Egg white: 1
Salt: 1/2tsp
Ground White pepper: pinch
Corn starch: 3tbsp
Water: 1/4 cup
Soy bean oil: 4tbsp
Red bell pepper strips: 3oz
Green bell pepper strips: 3oz
Celery strips: 3oz
Whole chili pepper: 8
Diced Chinese sausage: 1/3cup (rough chop dice)
Crushed chili flakes: 1/2tsp
Fermented black bean: 1tsp
Minced garlic: 1.5 tsp
Minced ginger: 1.5 tsp
Low sodium soy sauce: 1/2 cup
Brown sugar: 2tbsp
Rice cooking wine: 1tbsp
Sesame oil: 1tsp
Water: 1/4cup
Corn starch: 2tbsp
Preparation:
Combine all chicken breast marinade ingredients together Slice chicken into thin pieces and combine with all of the ingredients to marinate for 30 minutes After 30 mins., heat up the cooking pan on high heat with 3tbsp of soy bean oil until the pan is slightly smoky Add the marinated chicken breast into the pan, cook and stir for 1.5 minutes or until the chicken is fully cooked. Take the chicken out of the pan and rest of the cooking liquid to set aside for later cooking
Reheat the same pan with medium heat with 1tbs soy bean oil Add whole dry chili to the pan to toast for 10 seconds follow by diced Chinese sausage cook for additional 15 seconds. Note, it is okay for the sausage to be little brown but not burnt Add all three vegetable strips and let cook for 30 seconds Take out all of the content that’s in the pan, place them with the chicken breast
Start with a clean pan with medium heat and 1tbs of soy bean oil Add crushed chili and black beans to the pan to toast for 5 seconds, followed by ginger and garlic, stir until the aroma releases Add cooking wine, soy sauce and sesame oil In a separate bowl, stir cornstarch and water together until it becomes a slurry Pour the slurry slowly into the pan with the sauce content. Thicken it until it’s like a thick soup Stir together until everything in the pan is well coated Serve right away with some hot steamy white or brown rice and enjoy
