For a romantic Valentine's day, here is a delicious recipe to enjoy with your better half: Chuletas a las Dos Manzanas, or paprika-rubbed pork chops with sauteed apples.
4 pork chops, center cut, bone-in
1 tbsp garlic powder
1 tbsp onion powder
½ tsp dried rosemary
½ tsp smoked paprika
Salt and pepper to taste
3 tbsp canola oil
1 green apple, cored, and cut in eighths
1 yellow apple, cored, and cut in eighths
2 oz Brandy, Calvados or rum
1. Mix the dry ingredients.
2. Pat pork chops dry with a paper towel. Rub 1 tbsp of canola oil on both sides of the meat. Rub the dry seasoning and let sit for 10-15 minutes.
3. Heat a large sauté pan at high heat. Add 2 tbsp canola oil and when hot, place the chops inside. Brown 4 minutes per side. When done, remove the pan from the flame and add the alcohol. Lower the heat to medium.
4. Very carefully and away from you, place pan back on the flame, and let the alcohol burn. Add the apples and let cook 5 minutes. Serve.
Yields 4 servings.
