Updated

Just in time for Halloween, here is a delicious pumpkin soup recipe by Denisse... riquisimo!

Ingredients

1 tablespoon canola oil
1 medium size Spanish onion, chopped
1 carrot, peeled and chopped
2 garlic cloves, peeled and finely chopped
1 teaspoon shredded ginger
4 cups chicken broth
2 lbs fresh pumpkin or 2 cans (15 oz) pumpkin purée
Salt and pepper (to taste)
Toasted pumpkin seeds (for garnish)

Directions

Pour oil in a medium sized pot over medium-low heat and then add the onion.

Cook gently, without browning, 3 to 4 minutes.

Add garlic, carrot, ginger and pumpkin and cook another 2 to 3 minutes.

Pour the chicken broth and season with salt and pepper.

Cook covered with lid over medium heat for 30 minutes.

Remove from heat and bring to room temperature.

Pour  in blender (in badges) and mix until creamy. Adjust taste.

Pour into bowl and garnish with toasted seeds
