Ingredients:

1/2 pound butter

1 pound bacon, diced

1 pound Portuguese sausage, diced (substitute with chorizo if unavailable)

2 cup onion, diced

1 cup celery, diced

2 cup toasted Portuguese sweet bread, cubed

1 cup peeled and diced sweet potato, boiled 6-10 minutes (until mid-tender)

1/2 cup chopped cilantro

1/2 to 1 Cup chicken broth

2 teaspoon poultry seasoning

Salt & pepper, to taste

Preparation:

Add butter & bacon to large pre-heated pan. Let them begin to render. Stir in sausage, onion, and celery. Cook until onions are translucent. Add potatoes, and seasoning. Add stock and stir together. Add cubed and toasted Portuguese sweet bread to desired consistency, adding more stock for a wetter consistency. Garnish with cilantro. Add salt/pepper to taste.*Total Time: 45 Minutes- 1 Hour (Dish can be made the night before, and re-heated when serving is desired)
