Ingredients:
6 thin slices whole-grain (French baguette or Italian bread)
1 clove garlic
1 tablespoon plus 1 teaspoon olive oil
3 plum tomatoes, chopped
1 tablespoon, fresh chopped basil
1 teaspoon balsamic vinegar
Salt and pepper to taste
Preparation:
Preheat the oven to 450° Fahrenheit.
Arrange the bread slices on a baking sheet. Bake for 5 to 6 minutes, or until bread looks lightly toasted.
Cut the garlic in half and rub the cut sides on each slice of bread.
Drizzle the slices with 1 tablespoon of the olive oil. Toss the tomatoes, basil, balsamic vinegar, and remaining olive oil together in a bowl. Divide this mixture between the bread slices, heaping it on top. Season with salt and pepper. Serve immediately.
