Celebrate the great flavors of Cinco de Mayo without putting a dent in your diet!

Greek Guacamole  

Traditional guacamole is pretty high in calories with about 200 calories per ½ cup serving. For a lighter version that’s even creamier, just blend half parts guacamole and plain Greek yogurt. You’ll save more than 100 calories per serving and get a nutrition bonus with about 7 grams of protein.

Spicy Mexican Grilled Corn

You won’t miss fatty creamed corn swapping it for spicy grilled Mexican-style corn on the cob sprinkled with chili powder-lime seasoning or a touch of sea salt and a spritz of I Can’t Believe It’s Not Butter spray.

Black Bean Tortilla Soup

Made with black beans, avocado, tomatoes, and cilantro, this Mexican favorite is absolutely delicious and surprisingly low in calories with about 110 calories per 1 cup serving. Black beans are great when you are dieting because one cup contains a whopping 15 grams of fiber, so even a small serving is rich-tasting and very filling.

Fish Tacos

High in protein, low in saturated fat, fish such as cod, tilapia, and grouper, are always a good choice when you are dieting. However, traditional-style fish tacos aren’t so diet-friendly when the fish is fried and served with white flour tortillas that are high in carbs and not much else.  For a lighter and more filling fish taco, go with a high-fiber wrap like La Tortilla’s that has 12 grams of fiber and 8 grams of protein per serving.

Skinny Margaritas

A typical margarita is nothing short of a calorie bomb, easily packing 500-700 calories per drink. For an amazingly tasty margarita that has only 100 calories, muddle fresh fruits such as strawberries, peach, and pomegranate and mix with sparkling water and an ounce of tequila! Using fresh fruit in place of sugary mixer makes your drink light, refreshing, and truly nutritious.
