“What’s so unbelievable is that I was probably at least 15 pounds smaller than I am right now,” Simpson tells the February issue of Redbook magazine. “What’s more unbelievable is that the press could create something like that out of a pair of jeans…what woman wants to be brought down for wearing a pair of jeans?”

The press-wary Simpson is gracing her first magazine cover since the birth of her first child, Maxwell (not to mention her second, Ace), and the country singer says she never once listened to the talk about her weight during her back-to-back pregnancies.

“I never listen to it, no matter who the press talks about when they're pregnant. It's ridiculous and unfair,” she said. “I think any woman who is pregnant and creating a life is pretty much entitled to eat whatever she wants as long as she's healthy. I wasn't going to let the media take away from what was one of the happiest times in my life.”

So odds are Simpson will be keeping her wedding to the father of her two children, former pro football player Eric Johnson, under wraps as long as she can. And while it has taken them awhile to tie the knot, Simpson, who famously married singer Nick Lachey and rose to stardom in their reality show “Newlyweds: Nick & Jessica,” says this one is for keeps.

“I've learned that sometimes love is not enough. You can have a soul mate and be madly in love with that person, but it¹s not necessarily enough. I think you have to have personalities that mesh well. You have to be the yin to their yang,” she explained. “You also have to be open to figuring things out together and communicating even when it¹s the last thing you want to do. I have to admit, it doesn't hurt that Eric is one of the hottest men I've ever seen and he looks amazing naked!”
