Rather than the fried and processed tortilla shells and red meat accustomed with taco-making, here’s a lighter, healthier version that’s packed with flavor.

Replace taco shells with lettuce cups and opt instead for an ultra-light and delicioso turkey picadillo (hash).

Ingredients:

1 tablespoon olive oil

1 yellow onion, chopped

1 red bell pepper, seeded, ribbed and chopped

1 garlic clove, finely minced

2 pounds ground turkey

1/2 cup ketchup

1/4 cup chopped raisins

3 tablespoons Worcestershire sauce

1/3 cup low sodium chicken stock

1 tablespoon dark brown sugar

1 tablespoon white wine vinegar

1 teaspoon fresh lemon juice

1 teaspoon paprika

1 teaspoon salt

1/4 cup chopped pitted green olives

5-6 lettuce leaves, washed and dry

Directions:

Heat oil in a large skillet over medium-high heat. Add onions, peppers and garlic, and cook until soft, but not browned, about 3 to 5 minutes, stirring often.

Add the turkey meat and cook until it is no longer pink, about 5 minutes, stirring often. Stir in the ketchup, raisins, Worcestershire, chicken broth, brown sugar, vinegar, lemon juice, paprika and salt. Reduce the heat to medium-low, cover and simmer until all of the flavors come together and the meat is well crumbled and separated, 10 minutes.

Stir in the green olives and serve inside the lettuce leaves.
