Maple and Canadian Whole Grain Mustard Glazed Cedar Planked Salmon

Crafted by the Executive Chef to the Candian Prime Minister, Tim Wasylko, this dish is a classic tribute to all that is Canada.

Ingredients:

1 1/2 pound Canadian Salmon fillet - cut to fit plank(s)

1/2 cup Grade "B" Maple syrup

1 tablespoon Mrs. McGarrigles whole grain mustard

Kosher salt and fresh cracked black pepper

Preparation:

Soak pieces of 12 x 7-inch untreated cedar plank in water for 30 minutes or for up to 24 hours; season salmon with salt and pepper - place salmon on top.

In small bowl, whisk together maple syrup, mustard, brush half over salmon.

Place plank on grill/smoker or if necessary, in oven. Cook, for 20 to 25 minutes brushing once with remaining maple mixture, until fish flakes easily when tested. Halve salmon lengthwise; cut crosswise into 6 slices. Transfer to serving platter.
