I love cheesecake, but at more than 500 calories a slice, it's an infrequent indulgence. This recipe will satisfy your craving for the creamy taste of cheesecake- at a fraction of the fat and calories! Plus with the addition of berries it gives you an extra boost of fiber. Place these in large goblets and serve as a delectable dessert to your guests.
• 1/2 cup low- fat ricotta cheese • 4 ounces fat-free cream cheese • 4 tablespoons Splenda • 1 teaspoon vanilla extract • 2 cups raspberries • 2 cups blackberries • 2 tablespoons water
1. In a blender or food processor, combine the ricotta cheese, cream cheese , 2 tablespoons of the Splenda, vanilla, and raspberries. Process until smooth. Transfer to bowl. 2.
