Ingredients:

2 pounds lean pork butt or loin
Salt and freshly ground black pepper
2 tablespoons vegetable oil
3 large garlic cloves, minced
Salsa de chile colorado (You'll need the entire amount in this recipe)

Cut meat into 1-inch cubes. Add salt and freshly ground black pepper to taste.
In a large heavy pan over medium-high heat, heat oil until almost smoky.
Add the meat and garlic and cook until the meat is browned, about 3-5 minutes.
Add the red chile sauce, adjust seasonings and continue to cook for 15 to 20 minutes or until meat is cooked. Dish can be made ahead and reheated when needed.
