COCONUT SPINACH
Ingredients:
1 lb. frozen spinach
2 tbsp. coconut oil
¼ c. onion, chopped
¼ tsp. salt
Optional:
1 tsp. ginger
½ tsp. ground cumin
⅛ tsp. ground nutmeg
½ tsp. cayenne pepper
½ c. cashews
Instructions:
Melt coconut oil in fry pan and sauté onion until translucent or soft. Add spinach, salt and other seasonings. Stir and simmer for 5-10 minutes.
