What to do With Thanksgiving Leftovers

Do you need some new ideas for what to do with those Thanksgiving leftovers? Try out these two dishes that will use up some of those extras in a non-traditional way.

Turkey Turnovers 13-15 minutes

Muffins 20-25 minutes

 

Turkey Turnovers

Ingredients

Two Sheets of thawed puff pastry

1 cup leftover turkey meat, chopped

⅓ cup of brie, cut into cubes

⅓ cup leftover cranberry sauce

salt and pepper to taste

olive oil

Directions:

1. Preheat oven to 400

2. Cut thawed puff pastry sheet into fourths (so you will have 8 squares)

3. Place squares on a lightly oiled baking sheet

4. Place several pieces of turkey on one side of the pastry

5. Top with a piece of brie, 1 tbsp cranberry sauce, and a sprinkle of salt/pepper

Amounts are best guessed by eyeballing the turnovers and making sure they aren’t so stuffed that you can’t fold them over

6. Fold one edge of the square over the other, making a triangle. Then fold the bottom edge of the dough over the top edge- sealing the triangle

7. When all turnovers are folded, brush them with olive oil and sprinkle with a bit more salt/pepper

8. Use a knife to make a small score on the top of each turnover, allowing air to escape while cooking

9. Bake for about 15 minutes, until tops are browned

10. Serve Warm and Enjoy!

Cooks Note: Stuff these with a variety of items; leftover sweet potatoes, mashed potatoes, different cheeses, stuffing. The possibilities are endless!

 

Day After Cranberry Sauce Muffins

Ingredients

1 cup flour

½ cup whole wheat flour

1 cup old fashioned oats

1 tsp cinnamon

1 tsp nutmeg

⅓ cup brown sugar

1 tbsp baking powder

½ tsp baking soda

½ tsp salt

1 ½ cups leftover cranberry sauce

½ cup skim milk

⅓ cup vegetable oil

1 egg

1 tsp vanilla

Directions:

1. Preheat oven to 400 degrees, grease a muffin tin or use paper liners

2. Combine the flours, oats, brown sugar, cinnamon, nutmeg, brown sugar, baking soda, and salt. Set aside

3. In a separate bowl combine the milk, oil, cranberry sauce, egg, and vanilla. Mix well

4. Fold wet ingredients into dry, stir until just combined

5. Pour batter into muffin cups

6. Bake 20-25 minutes, or until a toothpick inserted into the center of the muffin comes out clean

7. Top with additional cranberry sauce or powdered sugar
