Who could possibly resist the gooey goodness that is a quesadilla? Whether it's juicy, shredded chicken breast cocooned in a bed of oozing Oaxaca cheese and crackling flour tortillas, or hearty black beans with even more melty cheese piled on top, it's going to be delicious.

But did you know there’s another, more seasonal way to enjoy this hand-held Mexican dish? One that takes advantage of fall's flavors, and might be even healthier for you?

It might not be Thanksgiving quite yet, but we’re already thinking about the star of the show — which is why we’re drooling over turkey apple quesadillas with muenster and BBQ sauce. It’s a mouthful, but so is this dish.

“Quesadillas are an easy go-to weeknight meal,” says Kelly Pfeiffer, the recipe developer behind Nosh and Nourish. “They’re hot, melty, stuffed with yumminess, super quick to make, and everyone devours them without complaining or arguing. That’s my kind of meal.”

Pfeiffer also likes to keep her quesadillas light yet flavorful by adding turkey slices, sweet honeycrisp apples, barbecue sauce for some kick, and even some creamy pumpkin puree.

Another perk? Pfeiffer's recipe is a mouthwatering way to make use of all that turkey after Thanksgiving. (So maybe set some aside!)
