Ingredients:

3 cups diced cooked turkey

1 celery stalk, diced

1 apple, diced

2 green onion, thinly sliced

4 tablespoons of fresh tarragon, finely chopped

4 cups chicken broth

1 cup wild rice

1/2 cup extra virgin olive oil

3 tablespoons white wine vinegar

1 teaspoon Dijon mustard

pinch of sugar

Preparation:

Combine broth and wild rice in small saucepan. Bring to boil. Cover and simmer over medium-low heat until rice is tender and liquid is absorbed, about 50 minutes. Remove from heat and let sit covered for about 10 minutes

Transfer rice to a medium bowl. Cover and refrigerate until chilled. (If you're in a hurry its also fine to leave it warm)

Meanwhile, dice turkey, celery, apple, green onion, and tarragon

Add turkey, celery, apple and green onion to wild rice

Whisk olive oil, vinegar, mustard, tarragon and sugar to blend in small bowl. Pour over wild rice mixture and toss well. Season with salt and pepper
