Polyunsaturated seed oils are the enemy of healthy cooking and sadly, most baking recipes require the use of the stuff. Using avocado oil eliminates the trans fats, free radicals and oxidized acids found in vegetable oil, and adds a healthy dose of monounsaturated fat.

Ingredients:

3 Large eggs

1.5 cup Palm sugar

6 ounce Avocado oil

2 ounce Milk

3 teaspoon Lemon Zest

2 cup Flour

1/2 teaspoon Baking soda

1/2 teaspoon Baking powder

1 teaspoon Sea salt

Preparation:

Pre-heat oven to 350° F. Grease a 9-inch bundge pan with avocado oil.

Beat eggs with sugar, avocado oil, milk, lemon zest. Combine flour baking soda, baking powder and salt in a separate bowl. Gradually beat dry ingredients with the wet.

Pour mixture into the greased bundt pan and bake for 1 hour or until a toothpick comes out clean. Let cool for 10 minutes. Invert pan onto a cake plate and allow to continue cooling. Serve with fresh fruit compote or powdered sugar.
