This sweet, juicy and crispy side dish will add bright holiday colors to the table.

Ingredients

For the Beets

  • 1 cup kale, thinly sliced
  • 1 cup raw red beets, match stick cut
  • 1 cup jicama, match stick cut
  • 3/4 cup raw apple, with skin, match stick cut
  • 2 tablespoon cilantro, chopped
  • 1 lime, zested

For the Dressing

  • 1/4 cup plain nonfat Greek yogurt
  • 1 teaspoon ginger, fresh grated
  • 2 tablespoon honey
  • 1/4 cup sherry vinegar
  • 3 teaspoon yellow mustard
  • 1 tablespoon raw onions, minced
  • 1 teaspoon raw garlic, grated
  • 1 teaspoon dried tarragon, chopped
  • 1 teaspoon raw red hot chili peppers, minced

Preparation

Step 1:

  • Whisk dressing ingredients together.

Step 2:

  • Toss the raw vegetables with the dressing.

Step 3:

  • Serve immediately.
