This “almost Japanese style iced coffee” recipe, developed by Josip Drazenovich of iconic New York coffee roaster Dallis Bros. Coffee, is a really easy recipe for a home brewer to make in the comfort of his or her own kitchen. Inspired by Japanese style iced coffee, which utilizes a hot brew method, this recipe doesn’t require all the fancy coffee gizmos not everyone has, and it yields a great cup of iced coffee.
- 3/4 cup freshly roasted coffee ground like cracked pepper
- 9 ounce water, just off boiling point
- Heat resistant vessel
- Coffee brewer (I used a Bonmac, but any coffee brewer would do. Even French press, though you may get some coffee particles depending on the filter)
- 16 ounce Ice
- Put the filter on the brewer, making sure it on there right (I pre-wet my filters because it improves taste, washing away any paper taste you may get in the cup).
- Pour the grinds into the brewer.
- Make the first pour and wait about 20-30 seconds to let all those gases out to promote better extraction.
- After those 20-30 seconds have passed, begin the second pour, pouring in small circles straight in the middle (I like to not let the water level in the brewer go down past or above half way).
- After you finish pouring the 9 oz of water, let it drip finishing the extraction in about 3:15 minutes.
- After it's finished dripping, fill your cup with ice and pour directly and aggressively in the middle of the cup.
- Enjoy your almost Japanese style iced coffee!
- Coffee brewers that use a hot plate may also work, which is the up side to this recipe. I would just recommend letting them cool off a bit given that they are way too hot.
