'Tis the season for parties, gifts under the tree and visiting with friends and family. The time-honored tradition of Christmas baking is a highlight of the season for many families. This includes the growing popularity of cookie swaps, where loved ones meet to share some holiday cheer and exchange their cookie creations. But making fabulous holiday cookies doesn't always need to involve a rolling pin and cookie cutters. We decided to lend a hand this busy season with this delicious, easy-to-make White Chocolate Cherry Oatmeal Cookies recipe. It's guaranteed to make you the star of any cookie swap. 1 cup (2 sticks) unsalted butter, at room temperature
1 1/4 cup packed brown sugar
1/2 cup white granulated sugar
2 large eggs
1 3/4 cup unbleached all purpose flour
1 teaspoon baking soda
1/2 teaspoon teaspoon salt
1 1/4 teaspoon cinnamon
1 teaspoon nutmeg
2 tablespoon half and half
2 teaspoon vanilla extract
2 1/2 cup oats
1 12oz Bag of white chocolate chips
1 10 oz can/jar of dried cherries
Preheat oven to 350 degrees
Beat brown sugar, butter and white sugar in large bowl until creamy. About 5 minutes.
Next, beat in the eggs, half & half and vanilla extract until well combined.
In a separate small bowl sift together the flour, baking soda, salt cinnamon and nutmeg.
Using a wooden spoon, gradually stir flour mixture into the butter mixture until well combined.
Add oats, white chocolate chips and dried cherries. Mix together until these are pretty evenly distributed throughout the batter.
Roll tablespoon sized portions of the cookie dough and drop them onto a prepared baking sheet.
Bake for approximately 11 minutes. Keep on eye on them. I like to under cook mine just a touch so they stay nice a chewy. Allow to cookies to cooling on a cookie rack and enjoy!
