This recipe is very close to my heart. When I was a little girl, Mama always let me make it. I have memories as early as four years old sitting at the table and stirring the brown sugar into the flour and other ingredients. Of course, Mama did all of the real work, but it takes so little for a child to own a dish. She’d let me stir up the topping and sprinkle it on the peaches, and then she’d place it in the oven. Come suppertime everyone made a grand to do about “Christy’s peach crisp” and Mama and Daddy always swore it was the best crisp they’d ever had. I started my children out making their own peach crisps at a young age, too. I feel it is so very important to get our kids in the kitchen with us when we cook. Not only are you passing on a living and tactile family history, but you’re creating memories they’ll always cherish. You’re also raising their self-esteem, giving them a sense of accomplishment, and teaching kills they’ll use for the rest of their lives. Cooking with your children and grandchildren presents the perfect opportunity to tell them the stories of your childhood and to pass on your values and outlook on life. In today’s fast-paced world, people are once again realizing the value of family time around the dinner table, but the real opportunity for making memories begins in the kitchen.

Ingredients:

One 29-ounce can sliced peaches, drained

? cup flour (all-purpose or self-rising)

? cup brown sugar

? cup oats (quick-cooking or old-fashioned)

1 teaspoon ground cinnamon

? cup (1 stick) margarine or butter, softened

Preparation:

Preheat the oven to 400°F.

Arrange the peach slices in an 8 x 8-inch square pan.

In a large bowl, mix the flour, brown sugar, oats, cinnamon, and margarine with fork; sprinkle over the peaches.

Bake until lightly browned, about 20 minutes. Serve warm with ice cream.
