You're probably familiar with traditional Italian rainbow cookies. But an Italian rainbow cookie cake? Prepare to save extra room for dessert.

Culinary instructor Alejandra Ramos of Always Order Dessert is, like us, passionate about sweets. When she was asked by an editor of Bon Appetit magazine to enter one of her recipes for a bake-off contest, she was happy to oblige. The result was her Italian rainbow cookie cake that paid tribute to her childhood.

“Growing up in North Jersey, these cookies were present at every single family or community function, from PTA meetings to birthday parties,” she explains on her blog. “I used to load up on them, grabbing them three and four at a time and tucking them into an open napkin when nobody was looking. Later I’d find a quiet corner where I could devour them slowly and methodically, one sweet almond layer at a time.”

Fortunately, you won’t have to go through the same trouble to enjoy this tantalizing dessert. Ramos’ cake features three spongy layers rich with luscious apricot and raspberry preserves, then frosted with bittersweet chocolate ganache.
