Oprah's personal chef, Art Smith, author of "Kitchen Life," drops by with a fast, healthy recipe that can make for a quick weeknight supper!

Soba Noodles in Miso Broth with Starkist Teriyaki Tuna Fillets and Vegetables
(Serves 4)

7 ounces soba noodles
Dark Asian sesame oil for the noodles and for serving
1/2 pound shiitake mushrooms, stems discard and caps cut to 1/2-inch wide strips
2 cups trimmed and coarsely chopped bok choy, preferably baby bok choy
6 scallions, white and green parts, chopped
3 tablespoons red miso, or more to taste
4 Star-Kist Teriyaki Tuna Fillets
Crushed hot red pepper flakes for serving

1. Bring a large salted pot of lightly salted water to a boil over a high heat. Add the soba noodles and cook until barely tender, about 5 minutes. Drain well and rinse under cold water. Toss with a drizzle of sesame oil to keep the noodles from sticking.
2. Bring another pot with 6 cups cold water to a boil over high heat. Add the mushrooms, bok choy and scallions. Cook just until the mushrooms are tender about 3 minutes. Add the drained noodles and cook just until the liquid returns to a simmer. Remove the pot from the heat. Transfer about 1 cup of the cooking liquid to a small bowl, add the miso, and mix to dissolve the miso. Stir the dissolved miso back into the pot. If you like a stronger flavor, dissolve more miso in some cooking liquid and add it to the pot.
3. Ladle the soup and noodles into deep bowls and top each with a StarKist Teriyaki Tuna fillet. The steam from the soup will heat the tuna. Serve hot and pass the red pepper and sesame oil on the side so that each person can season the soup to taste.

This is the simplest soup in the world, but here are some tips to make it even easier:

1. Buy pre-cut vegetables in the supermarket. You can substitute pre-cut napa cabbage or ready to eat baby spinach leaves
2. Use prepared foods to top the soup. You can use left-over pork or chicken also
3. Miso keeps for months in the refrigerator (it's fermented soybean paste.) It's full of protein.
4. Don't overcook the buckwheat soba. They are thin, and only need 5 minutes in boiling water
