    Super Bowl Recipes – All You Need for Your Party

    Mini Truffle Parmesan Mac & Cheese Muffins  Ingredients: 2 cups uncooked elbow macaroni 1 tablespoon butter 1 egg, beaten 1 cup milk 1 1/2 cups shredded sharp cheddar cheese 1 1/2 cups shredded mozzarella cheese 1 1/2 cup Parmesan cheese 1/2 cup seasoned dry bread crumbs 2 teaspoons olive oil 1/2 teaspoon salt 1/2 tsp-1tsp truffle oil Directions: Preheat the oven to 350 degrees. Grease a muffin tin with nonstick cooking spray. In a small bowl, mix the bread crumbs, olive oil and salt. Cook the elbows for about 8 minutes; they should still be a little bit firm. Remove from the heat, drain and place in a pan; stir in the butter and egg until pasta is evenly coated. Reserve 1/2 cup of sharp cheddar cheese and stir the remaining cheddar cheese, parmesan, milk and mozzarella cheese and truffle oil into the pasta. Spoon into the prepared muffin tin.     Turkey Chipotle Chili Chili • 2 tablespoons extra virgin olive oil • 4 cups diced Spanish onion • 2 pounds ground turkey • 2 – 28 oz cans diced tomatoes • 1 – 28 oz can baked beans • 2 – 15 oz cans red kidney beans, rinsed • 1 pound bag frozen corn • 2 tablespoons chipotle chili powder* • 1 tablespoon ground cumin • 1 tablespoon oregano • ¾ teaspoon salt • ¼ teaspoon black pepper Tortilla Chips • 2 – 12 oz bags tortillas** • 2-3 tablespoons extra virgin olive oil • 1 garlic clove, finely chopped • Salt Directions 1. In a large skillet, heat oil in over medium-high heat while chopping onions. 2. Sauté onions for about 10 minutes until golden. Then add ground turkey and cook for another 10 minutes, stirring and breaking up chunks until evenly browned. 3. Once cooked, transfer turkey and onion mixture to a slow cooker. 4. Add diced tomatoes, beans, corn and mix well. 5. Add spices (chipotle, cumin, oregano, salt and pepper) and mix until well combined. 6. Cover and cook on high for 4 hours or on low for 7 hours. 7. About 30 minutes before the chili is ready, begin to prepare your tortilla chips by brushing each side with olive oil and garlic mixture. Then sprinkle one side with salt. 8. Stack tortillas and cut into 8 wedges. 9. Forming a single layer, spread cut pieces of tortillas on baking sheet. You will need several pans or bake in several shifts. 10. Serve with a dollop of sour cream. Dip, scoop, douse and enjoy! 11. If chipotle powder is not available, substitute with ¼ cup regular chili powder and 1 tablespoon of smoked paprika. 12. And with so many options available, be sure to try different flavored tortillas for your chips. *If chipotle powder is not available, substitute with ¼ cup regular chili powder and 1 tablespoon of smoked paprika. **With so many options available, be sure to try different flavored tortillas for your chips such as 8 grain, tomato and basil, high fiber low fat, etc. Makes 18 servings.     Hot Potato Boats Ingredients: • 2 ½ pounds small to medium sized potatoes • 4 tablespoons light sour cream • ½ teaspoons salt • ¼ pound hot habanero cheddar, shredded • ½ pound turkey bacon slices • 1 garlic clove, finely chopped Directions: 1. Wash potatoes and cut each in half. 2. Boil potatoes on medium-high heat for about 20 minutes or until fork tender. Then drain and cool enough to handle by hand. 3. While potatoes are cooking, fry turkey bacon until crispy. 4. Shred habanero cheese* and set aside. 5. With a spoon, scoop out potato leaving skin intact. 6. Line potato boats on baking sheet. 7. Mix potato, sour cream, garlic, half the shredded cheese and salt until well combined. 8. Spoon mixture into each potato boat and top with remaining cheese. 9. Bake for 10 minutes at 375 degrees until cheese is melted. Then top with turkey bacon crumbles** for a flavorful crunch. *Goat cheese and queso blanco (farmers cheese) are good options if you don’t like too much heat.     Turkey Chili Stuffed Holland Peppers Ingredients: 4 medium bell peppers 1/2 lb. ground turkey, cooked & drained 1 c. cooked rice 1/4 c. chopped onion (about 1 sm.) 1 tsp. ground cumin 1/4 tsp. salt 1/4 tsp. pepper 2 eggs 2 cloves garlic, finely chopped 1 can (4 oz.) chopped green chilies 1 jar (2 oz.) diced pimentos, drained 1/2 c. shredded Monterey Jack cheese (2 oz.) Directions: Heat oven to 350 degrees. Spray rectangular baking dish with Pam or with nonstick cooking spray. Hollow and Clean Peppers. Remove seeds and membranes; rinse well. Mix remaining ingredients (except cheese)_; loosely stuff each pepper. Arrange stuffed peppers in baking dish. Cover and bake about 30-40 minutes or until rice mixture is hot. Sprinkle with cheese.     Oven-Baked Crunchy Chicken with Sweet Potato Fries Ingredients: • 1 ½ - 2lbs. chicken tenderloins • 1 cup whole wheat flour • ¼ cup cornmeal • ¼ cup almonds or cashews, finely chopped • ¼ cup panko crumbs • 2 tablespoons spiced seasoning* • 3 tablespoons vegetable oil • 2 egg whites, lightly beaten • Salt and black pepper to taste • 3 medium sized sweet potatoes • ¼ cup extra virgin olive oil • Grill seasoning** Directions: 1. Heat oven to 350 degrees. Peel and cut sweet potatoes into fries. The smaller the cut, the faster they will bake. 2. Liberally, sprinkle grill seasoning to taste. Mix well. Add ¼ cup olive oil and mix again. 3. Bake in the oven for about 45 minutes or until soft. Baking time varies depending on cut size of fries. 4. While sweet potatoes are baking, prepare your chicken fingers. Add salt and pepper to taste to the chicken. 5. In a bowl, separate egg whites from the egg yolks and beat lightly with fork. 6. Place flour in a small bowl and In a separate bowl combine cornmeal, almonds, panko crumbs and spiced seasoning. 7. Dip chicken in egg, then dredge crumb mixture and place on a baking sheet. 8. Bake at 350 degrees for 15-20 minutes until golden brown. 9. Serve with your favorite salsa. Makes 4 servings *Spice Seasoning – we used a combination of garlic powder, chipotle powder, sweet paprika and onion powder **Grill seasoning – found in the spices aisle of your grocery store or to make your own, combine 3 tbls fresh coarse ground black pepper, 1 tbls coarse salt, 1 tbls onion powder, 1 tbls garlic powder, 1 tbls ground coriander, 1 tsp crushed red pepper flakes.     Buffalo Wings with Cilantro Yogurt Lime Sauce Ingredients: 3 lb chicken wings 1/2 cup honey and 1/2 cup ketchup tomato 2 Tbs Worcestershire 2 Tbs red wine vinegar 1 tsp dry mustard 1/4 tsp salt 1/4 tsp pepper Tabasco to taste Directions: Combine honey, ketchup, vinegar, Worcestershire sauce, mustard, salt, pepper and Tabasco .Add wings; toss to coat well. Refrigerate over night .Place wings on a barbecue grill; grill over medium high heat 10 to 15 minutes, turning often and basting with reserved marinade, until wings are cooked. For super saucy wings, reserve or make extra marinade....reduce on low heat on stove top and toss wings again once they are off the grill. Serve with a cilantro lime yogurt sauce. Cilantro Lime Yogurt SauceCombine 1 cup of Greek yogurt with 1 lime juiced and zested , 2 tablespoons of chopped cilantro and 1 clove of minced garlic.
