Monday Meal Makeover: California Waldorf Salad

I love this flavorful update of the American classic. It has a perfect balance of crisp apples, juicy grapes, sweet raisins and crunchy walnuts.

This version has a lively West coast flair that includes baby spinach leaves and a lighter dressing. Of course, I definitely recommend choosing to make this amazingly delicious salad with organic spinach, apples, celery, grapes and raisins because the conventional versions of these fruits and vegetables always place high on lists of produce most likely to carry multiple pesticide residues.

What you will need:

1/3 cup non-fat plain yogurt or sour cream

1/3 cup mayonnaise

2 tablespoons fresh lime juice

1 teaspoon grated lime zest

2 teaspoons curry powder

1/2 teaspoon honey or sugar

1/2 cup thinly sliced organic celery

1/2 cup organic raisins

3/4 cup halved organic seedless grapes

1 unpeeled organic apple, cut into1/3-inch dice (1 cup)

1/2 cup toasted pecans or walnuts

5 ounces organic baby spinach or mixed greens (about 6 cups)


1. Place the yogurt, mayonnaise, lime juice, zest, curry and honey in a small bowl. Whisk to combine.

2. Place the celery, raisins, grapes, apple and nuts in a large bowl. Add about half of the yogurt dressing and stir to combine. Just before serving, add the spinach and toss to combine. Add additional dressing if needed.
