Todd English's Walnut-Crusted Tuna Loin

Celebrity chef Todd English whipped up this delicious recipe on "FOX & Friends":

• Walnut-Crusted Tuna Loin Avocado Recipe (with Sweet Potato Salad, Asian Pear Vinaigrette)

6oz. sushi grade tuna loin
1/2 cup finely chopped walnuts
1/2 cup finely chopped parsley

1 ripe Avocado
2 sweet potatoes cooked, peeled and diced
1 tbs. small diced bacon cooked
2 tbs. whole grain mustard
2 scallions bias cut
¼ cup extra virgin olive oil
Juice of 1 lemon
Salt and pepper

1 ea. Asian Pear, med dice
1 ea. small shallot, fine dice
1 tsp. finely chopped fresh ginger
1 tbs. rice wine vinegar
1 tsp. sesame oil
1 tsp. walnut oil
2 tbs. extra virgin olive oil
Salt and pepper

In a medium size bowl whisk together mustard, oil and lemon juice, add diced sweet potatoes, bacon and carefully cut open and dice avocado same size as sweet potato add to the mix and stir carefully till all ingredients are coated, season with salt and pepper and fold in scallions.
In another bowl, pour your vinegar and slowly whisk in your oils, once emulsified add your diced ginger, pear and shallots. Season to taste with salt and pepper
Slice your pre cooked tuna(rare) into ¼ inch slices and place on top of a spoonful of avocado/pot salad, dress the tuna with a tablespoon of the pear vinaigrette.
