Leftovers are some of my favorite ingredients. They are already made, and the fact that they were worth saving guarantees they taste great! I wanted some way to trick out the classic holiday leftovers without making a sandwich. Behold, the sandwich of Japan, the sushi roll!  Robert Mondavi Private Selection Central Coast Chardonnay works in perfect harmony with all of the components individually, so it was a no-brainer to bring them all together in a sushi roll.


  • 1 half sheet of nori
  • 5 Ounce mashed potatoes, chilled
  • 2 Ounce turkey, shredded, chilled
  • 1 Ounce prepared cranberry sauce
  • 1 Tablespoon butter
  • 1 Tablespoon soy sauce
  • 2 Pinch all-purpose flour


Step 1

On a plastic wrap-covered place mat or plastic wrap covered sushi mat, place the nori, uneven side up. Using gloved hands, work quickly to spread the mashed potatoes over the nori, leaving ¼ of an inch on the side farthest from you. Flip the nori over and arrange the turkey and cranberry sauce in a line down the middle, long ways. Gently use the mat to roll up the roll.

Step 2

Cut the roll in to 6 or 8 pieces and refrigerate until ready to eat.

Step 3

In a small sauce pan combine the butter and soy sauce. Heat until the butter is melted, approx. 45-60 seconds.

Step 4

Gently whisk in the two pinches of AP flour. Behold, soy gravy.

Step 5

Drizzle the gravy over the roll and devour.

The Tip

These can be prepared en masse and refrigerated. Perfect for a Black Friday snack.
