Ingredients

For the Beets

  • 1 Cup kale, thinly sliced
  • 1 Cup raw red beets, match stick cut
  • 1 Cup jicama, match stick cut
  • 3/4 Cup raw apple, with skin, match stick cut
  • 2 Tablespoon cilantro, chopped
  • 1 lime, zested

For the Dressing

  • 1/4 Cup plain nonfat Greek yogurt
  • 1 Teaspoon ginger, fresh grated
  • 2 Tablespoon honey
  • 1/4 Cup sherry vinegar
  • 3 Teaspoon yellow mustard
  • 1 Tablespoon raw onions, minced
  • 1 Teaspoon raw garlic, grated
  • 1 Teaspoon dried tarragon, chopped
  • 1 Teaspoon raw red hot chili peppers, minced

Preparation
