Couscous can be made so many different ways, but this particular recipe allows you to bring out the flavors with citrus, walnuts, shallots, and a few surprises. 

Ingredients

  • 4-5 Oranges
  • 1 package Stoneridge Orchards Dried Cherries
  • 1 package Israeli cousccous
  • Handful of walnuts
  • 1 package of arugula (5 cups of chopped arugula)
  • 2 stalks celery
  • 2-3 sprigs shallots
  • Salt, Pepper, Olive Oil, Apple Cider Vinegar

Preparation

Step 1:

Make dressing. Cut and squeeze 2-3 oranges and mix with 1 tsp of Apple Cider Vinegar, 1 tbsp Olive Oil, with salt and pepper for taste.

Step 2:

Let sit.

Step 3:

Cut and squeeze 2 oranges and add this to boiling water.

Step 4:

Add couscous to this boiling water.

Step 5:

Chop all other ingredients and mix into a salad bowl.

Step 6:

Add 1/2 of the dressing to this mix.

Step 7:

Lay out the couscous to cool on a plate.

Step 8:

Once cooled mix this into the bowl. Mix in remaining dressing.
