For a little West Coast action, combine all your leftovers to make the most delectable of club sandwiches.  All you need (besides the leftovers) is a little bit of pepper jack, bacon, and avocado for that California kick.  Easy to make and even easier to consume.  

Ingredients

Between two slices of center cut quinoa bread, lightly toasted, layer the following:

  • 1 tablespoon cranberry mayo (recipe below)
  • 2 slices vine ripe tomato
  • 2 leaves Iceberg lettuce
  • 3 slices of thick cut bacon, cooked until crisp

For your second layer, add the following:

  • 1 oz. sliced pepper jack cheese
  • 4 oz. sliced leftover white meat turkey
  • 2 tablespoons of Stew’s chunky guacamole
  • Top with 1 slice of lightly toasted quinoa bread

Cranberry Mayo: Blend in your blender until smooth

  • 1 cup mayonnaise
  • ½ cup jellied cranberry sauce
  • 2 tbsp. dried cranberries
