Fourth of July Recipe: Firecracker Mango Salsa Shrimp

Mango Salsa Ingredients

• 2 plum tomatoes, diced
• 1 mango, diced
• ¼ - ⅓ cup red onion, diced
• 2 serrano peppers, diced
• 1-2 tablespoons cilantro, finely chopped
• 1 garlic clove, finely chopped
• 1 tablespoon olive oil
• 1 lime, juiced
• ½ teaspoon salt
• Red pepper flakes (optional)

Shrimp Ingredients

• 1 ½ pounds jumbo shrimp, peeled and deveined, tails on
• 1 tablespoon ground chipotle chile pepper
• ½ teaspoon salt
• 1 tablespoon olive oil
• 8-10 wooden skewers (soaked in water for 30 minutes)

1. Take first six salsa ingredients and mix in a bowl.
2. Add olive oil, lime juice and salsa. Mix again. Refrigerate for 30 minutes in order to marinate.
3. In a separate bowl, mix all shrimp ingredients and skewer four seasoned shrimp onto each stick.
4. Grill about 5 minutes on each side.
5. Layer over mango salsa.

Serves 4-6.
