The newly selected Pope Francis is known to live a humble life, cooking his own food and abstaining from rich, fatty meals.

Argentina’s The Nation newspaper reports that as archbishop, Jorge Mario Bergoglio kept his meals "frugal and healthy."  His favorite things to eat are fruit, skinless chicken and salads, although he’s said to drink a glass of wine from time to time.

Now that he’s the head of the Catholic Church, he’ll likely rely on the services of cooks to prepare the papal meals.  We pulled together a few recipes fit for a Pope.

  • 1. Chicken and Quinoa Salad

    When in Rome, they say, eat like the Romans.  Made with chicken breast and Radicchio--the Italian chicory --this protein packed dish will surely keep Pope Francis going during a schedule packed with meetings and masses.

    Bagna Cauda, or "hot dip" is another of Bergoglio's favorites, but one of things as cardinal he apparently did not cook for himself.  This a warm Italian dip of anchovy, garlic, butter and olive oil, typically served with raw or roasted vegetables.  The Nation reported that he instead would seek out dish at a local nunnery.
