Smokin' Steak and Eggs

Have a morning feast with this hearty homemade recipe!

Grilled Hanger Steak and Eggs:

Recipe from Glenn Harris, Executive Chef/Owner at Jane Restaurant

Makes 2 Servings

Ingredients:

2, 10 ounce portions of hanger steak

1/2 cup balsamic vinegar

1 cup olive oil

1 chopped shallot

6 large eggs

8 Yukon Gold potatoes sliced width wise

1 red pepper, chopped

1 small onion, diced

1 tablespoon parsley

Spanish paprika

Salt & pepper to taste

Directions:

- Marinate steak up to 24 hours in balsamic vinegar, olive oil, chopped shallot, salt and pepper; store in refrigerator.

- Grill steak on high heat until cooked medium or five to six minutes per side.

- Heat large non-stick saute pan with olive oil. When oil sizzles, add the potatoes, red pepper, onion, salt & pepper, and Spanish paprika.

- Saute on medium heat until the potatoes are golden brown. Transfer the potatoes to a warm serving bowl.

- In same saute pan, add small pad of butter and fry eggs.
