Black Bean Chipotle Flautas

Start off your Mexican fiesta with these healthy starters!

Put away the traditional chips and salsa and start off your Mexican meal with this tasty appetizer! Registered Dietitian, Cynthia Sass gave iMag one of her favorite recipes to help you stay skinny and feel satisfied. Check it out!

Black Bean Chipotle Flautas:

Chipotle seasoning transforms a few simple ingredients into an explosion of flavor, and the crispy texture will leave you wondering why deep fryers were ever invented.

Ingredients:

1 Tsp lime juice
1/4 Tsp chipotle seasoning
1 Tbsp scallions, sliced
1/4 Cup canned black beans, drained and mashed
2 Small corn tortillas
1 Tsp fresh cilantro, chopped

Directions:

1. In a small bowl, mix lime juice, chipotle seasoning, and scallions into mashed beans.

2. Spoon half of bean mixture lengthwise, off center onto each tortilla.

3. Sprinkle each with cilantro.

4. Roll up tortillas and place a toothpick through center to hold in place.

5. Bake at 425 degrees F. until golden brown (about 6 to 8 minutes).
