Asparagus Frittata
An easy go-to dish for any event!
Among the barbecues, graduation parties and holidays - almost everyone is doing some type of entertaining this summer. But if you don't have the time to whip up some elaborate eats, what can you make? iMag found an easy go-to recipe perfect for any event!
Ingredients:
1/2 Cup chopped onion
1 Clove garlic, crushed
3 Tbs margarine
10 eggs
1/2 Cup 1% milk
1/2 Tsp basil
1/2 Tsp salt
1/8 Tsp ground pepper
1 Can (15 oz.) Del Monte Extra Long Asparagus Spears, drained
1/2 Cup shredded Monterey Jack cheese,
1 Can (14.5 oz.) Del Monte Stewed Tomatoes, Italian Recipe with basil, garlic and oregano
1 Tbsp cornstarch
Directions:
1. Preheat oven to 350 degrees.
2. Sauté onion and garlic in 1 tablespoon of margarine in a 10-inch oven proof omelet pan; set aside.
3. Beat eggs with milk, basil, salt and pepper; stir in sautéed onions. Melt remaining margarine in omelet pan; remove from heat.
4. Add asparagus; pour egg mixture over the asparagus and sprinkle with cheese.
5. Bake for 30 – 35 minutes or until just set.
6. Combine undrained tomatoes and cornstarch. Cook in small sauce pan stirring constantly, until thickened and translucent.
7. Cut frittata in 6 wedges. Serve each wedge with tomato sauce.
