Growing up, I loved eating Sloppy Joes. I wanted to create the same flavors while boosting the fiber. Adding lentils did the trick-and you won't even notice they're in there! Serving on whole wheat buns adds even more fiber. Stick to this recipe and you'll save 300 calories and 16 g fat.
• 3/4 pound lean ground beef • 1/2 cup chopped onion • 1/2 cup chopped green bell pepper • 1 garlic clove, minced • 1 8-ounce can tomato sauce • 1/2 cup uncooked lentils • 2/3 cup water • 1/4 cup ketchup • 1 tsp red wine vinegar • 1/2 tsp paprika • 1/2 tsp salt • 1/4 tsp pepper • 1/2 tsp dry mustard • 4 whole wheat sandwich buns
1. In a large skillet over medium-high heat, brown beef with onion, green pepper, and garlic. Drain well. 2. Stir in remaining ingredients except sandwich buns. 3. Reduce heat, cover, and simmer 40 to 45 minutes or until lentils are tender. Spoon 1/2 of mixture onto each bun.
