Remember those classic lemon bars from your childhood, the beloved buttery shortbread bursting with citrus filling? Enjoy a taste of summer with a new, delicious take on an old favorite.

Uniting creamy meringue pie with tart lemon bars, blogger Emma Chapman of A Beautiful Mess has created a sweet-tart treat that’s super simple to make.

“I almost wanted to name these ‘Hurry Up Summer Tarts,’ says the blogger and recipe developer. “They taste very similar to those classic lemon bars that your mom would make every summer. You know, that perfect blend of sour and sweet. That’s what these tarts are all about, plus a little Swiss meringue on top.”

These palm-sized pies do more than brighten up your table. Chapman uses lemons and limes to create a rich, silky custard topped with a fluffy meringue frosting.

“What I really love about these tarts is the lemon and lime curd that you use for the filling,” says Chapman. “I had a little left over after filling my tart shells, so the next day I stirred the leftover curd into Greek yogurt. It was like lemon meringue Greek yogurt. And it was awesome.”

“If you have some leftover, I highly recommend that, too,” she adds. “It’s a lemon-lovers’ dream breakfast.”
