Chef Simone Panella created the Mozarella in Canozza for the menu at Brooklyn eatery Antica Pesa. To make it, lay mozzarella and anchovies on brioche bread, then dip the sandwich in beaten egg, then flour, then back into the egg, then breadcrumbs. Fry in canola oil at 350 degrees F for 6 to 7 minutes, or until golden brown and crispy.
