Shortbread Base/Crumb Topping

  • 1/2 pound (2 sticks) unsalted butter, at room temperature
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 2 ¼ cups all-purpose flour

Raspberry Jam

  • ¾ cup good raspberry jam


Shortbread Base/Crumb Topping

  • Step 1 Preheat the oven to 350 degrees. Cream Butter and Sugar until well combined. With the mixer on low, add the egg and vanilla extract. Add flour.
  • Step 2 Reserve 1 ½ - 2 cups for CRUMB topping
  • Step 3 Lightly pat the dough evenly on the bottom of a greased 9-inch square baking pan.

Raspberry Jam

  • Spread raspberry jam across the shortbread base.

To finish

  • Sprinkle your reserved crumbs on top of the raspberry jam. Bake at 350 degrees for 40-50 minutes, until lightly browned. Cool completely and Enjoy.
