Overnight Chia, Pumpkin Pudding

Some things are worth waiting (overnight) for. This delicious blend of flavors and textures plays on the classic chia seed pudding we all know and love, but with a twist by Sun Basket for fall.

Ingredients

  • 2 cups almond milk
  • 1 tablespoon maple syrup
  • ½ cup chia seeds
  • ½ cup pumpkin puree
  • ¼ teaspoon cinnamon
  • 2 tablespoons pecans
  • 2 tablespoons raisins

Preparation

Prep the pudding night before

  • In a large glass or bowl, combine the almond milk and maple syrup and season with salt. Stir in the chia seeds, pumpkin puree, cinnamon, and transfer to individual glasses or jars. Cover and refrigerate overnight.

The next day

  • Coarsely chop the pecans. Top the pudding with the pecans and raisins and serve.
