This sweet, juicy and crispy side dish will add bright holiday colors to the table.

1 cup kale, thinly sliced
1 cup raw red beets, match stick cut
1 cup jicama, match stick cut
3/4 cup raw apple, with skin, match stick cut
2 tablespoon cilantro, chopped
1 lime, zested
1/4 cup plain nonfat Greek yogurt
1 teaspoon ginger, fresh grated
2 tablespoon honey
1/4 cup sherry vinegar
3 teaspoon yellow mustard
1 tablespoon raw onions, minced
1 teaspoon raw garlic, grated
1 teaspoon dried tarragon, chopped
1 teaspoon raw red hot chili peppers, minced
Whisk dressing ingredients together.
Toss the raw vegetables with the dressing.
Serve immediately.
