Banana and Mascarpone Stuffed French Toast

Everything about this dish brings a smile to the face. Beautiful golden brown caramelized banana, the sweet banana flavored cheese inside, the maple syrup drizzled generously over the top, with some sweet whipped cream, and the freshest of fresh red strawberries. Something for you to look forward to after waking up!


For the stuffing

  • 5 Bananas
  • 2 cup Mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 tablespoon vanilla extract

For the egg wash

  • 4 Whole eggs
  • 1 tablespoon cinnamon

For the rest

  • 1 Loaf uncut brioche bread
  • 2 tablespoon butter
  • Dash of turbinado sugar
  • 2 ounce pure maple syrup


Step 1:

  • Heat the oven to 350 degrees and cook four of the bananas until the skin is black, and they are mushy to the touch (about 10 minutes). Then, remove the bananas from the peel and put into mixing bowl. Add mascarpone, vanilla and powdered sugar. Mix with whisk until smooth.

Step 2:

  • Slice the brioche into two-inch pieces, making a small slit in the side of each piece with a knife. Stuff the banana mascarpone mixture in the slit. Then, dunk the stuffed bread into the egg wash. Heat the griddle to 300 F, then place food on the griddle and brown both sides with 2 tbsp amount of butter.

Step 3:

  • Once golden brown, transfer to baking sheet and place in 350-degree oven for eight minutes or until the cheese is warm.

Step 4:

  • Remove French toast from over and place on serving dish. Slice last banana and place it on top. Sprinkle top with turbinado sugar and caramelize with a torch. Once sugar is golden, pour two ounces of pure maple sugar and sprinkle with powdered sugar. Add a dollop of whipped cream.
