In case you haven't noticed, The Big Easy has it's own distinct cuisine influenced by the many nationalities who settled in the city.

From Creole to Cajan, African to Italian, food in New Orleans is a melting pot of tastes and techniques that can't be found anywhere else.

So it's not a shocker that your average person on the street may get stumped when quizzed on some of the region's most favorite and exotic dishes, and are pretty clueless on even how to pronounce some of them.
