Making Dominique Ansel's Cotton-Soft Cheesecake

We visited the David Bouley Test Kitchen in New York, where the celebrity chef Dominique Ansel — the inventor of the Cronut™ — showed us how he makes his Cotton-Soft Cheesecakes. 

These mini confections are exactly what they sound like — cottony-soft cheesecakes piped atop a fluffy, almond-infused sponge cake.

Ansel also caramelizes the top of each cake not once, not twice, but three times for an extra crunchy layer of oozing sweetness.
