We get it, summer is officially over, and those sun-soaked days of sipping on a creamy pina colada are long gone — at least until next year.
But wait a minute, who says we have to give up on one of our favorite tropical treats just because the chilly fall season is here? Mixologist Natalie Migliarini of BeautifulBooze.com had the exact same thought, which is why she’s shaking things up by frying one of her beloved drinks.
“Today, I am bringing an eatable treat to you instead of my normal cocktail,” says the recipe developer behind fried pina colada shots. “This crazy-good shot is inspired by Mexico and my favorite beach drink: the pina colada. I love pina coladas because they define tropical with their pineapple and coconut flavors. I believe that you can actually taste the beach — or it transports you to the beach without the plane ticket.”
In time to welcome the autumn months, Migliarini decided to try cubing up a pineapple slice, soaking it in booze, rolling it in coconut, and then deep-frying until it was a “juicy nugget of pina colada goodness.” She even insists the creamy coconut coating keeps the rum in — and the greasiness to a minimum.
If you’re really feeling daring, Miglarini also recommends serving this fluffy, lip-smacking snack with coconut ice cream. However, we have a feeling you'll be more than happy to devour these tastes of summer on their own.
